I&rsquo;m constantly amazed by how quickly it cooks ingredients with traditionally long cooking times. This recipe for Instant Pot Chili is made with dry kidney beans, but only takes 15 minutes of actual cooking time!&nbsp;It&rsquo;s packed with warm and velvety flavors from a mixture of awesome spices, including cocoa powder&nbsp;<em>(trust me, it works)<\/em>. It&rsquo;s like eating a big bowl of cozy- it&rsquo;s so hearty and satisfying and warms you to the core. Mmm, mmm.<\/p>\n<p style=\"text-align: left;\">I got an <a href=\"http:\/\/amzn.to\/2wS54Qo\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">Instant Pot<\/a>&nbsp;for Christmas, and I&rsquo;ll admit: it took me a while before I felt confident using it. There is a bit of a learning curve associated with it, as with any new cooking technique or kitchen gadget. But after only a few uses, I can officially say that I&rsquo;M OBSESSED. It&rsquo;s amazing for cooking tough cuts of meat to perfect juicy tenderness&nbsp;<em>(think: pulled pork or pot roast)<\/em>. Pulses are the superfood group made up of beans, chickpeas, dry peas and lentils.<\/p>\n<p style=\"text-align: left;\">They are high in fiber and low in fat. They have tons of protein and nutrients. And my favorite part: they are CHEAP. Having a half cup of cooked pulses three times a week can be super beneficial for your health- you can sign up for the&nbsp;half-cup habit challenge <a href=\"http:\/\/pulses.org\/nap\/half-cup-habit\/\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">here<\/a>!<\/p>\n<p style=\"text-align: left;\">This Instant Pot chili recipe is a delicious, easy, and cheap way to get a hearty serving of pulses. I used dried kidney beans for this recipe, and they came out perfectly cooked. They held their shape and didn&rsquo;t turn mushy, but weren&rsquo;t too firm either. Here&rsquo;s how I did it:<\/p>\n<ol>\n<li style=\"text-align: left;\"><strong>I soaked the beans before cooking them.<\/strong> There are recipes out there that instruct you to cook the dry beans immediately without soaking, but I always find that it&rsquo;s hard to gauge cooking time and that the beans are a bit more difficult to digest without soaking them. It takes almost no hands-on time, just a little bit of planning. Sort through the beans to make sure there aren&rsquo;t any rocks or debris, then cover with double the amount of water in a container or bowl, and leave to soak in your fridge overnight <em>(12-24 hours)<\/em>. Then, when you are ready to use them, drain and rinse well.<\/li>\n<li style=\"text-align: left;\"><strong>I finished salting\/seasoning the chili after it was fully cooked.<\/strong> Adding too much salt to the cooking liquid of beans can affect their texture. There is a little bit of salt added to the veggies and ground beef in the beginning, but the rest is added after the chili is completely done.<\/li>\n<\/ol>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-6850\" src=\"http:\/\/www.bowlofdelicious.com\/wp-content\/uploads\/2017\/09\/Instant-Pot-Chili-spoon.jpg\" alt=\"This Instant Pot Chili is made with ground beef and dry kidney beans, and comes together in less than an hour! Dry beans are one of the least expensive, most nutritious foods you can buy, and because they make up the bulk of this chili, you&rsquo;ll be able to spend more on high quality, lean ground beef, which makes the entire recipe <strong>healthy<\/strong>. I definitely recommend using lean beef for this recipe because you saut&eacute; it directly in the pot without draining the fat- the chili might be a bit too greasy otherwise.<\/p>\n<p>Furthermore, this recipe<strong> makes a TON<\/strong>. One batch will feed 8-10 people- it&rsquo;s extremely hearty and filling.
