It&rsquo;s SO easy.<\/p>\n<ol>\n<li>First, <strong>saut&eacute; some diced onions in olive oil<\/strong>. If you want, you can add some garlic, but I like this particular recipe without it. I sometimes use butter or even chicken fat for this part instead of olive oil. You want to soften the onions and let them brown just a bit- this is best to do over medium-high heat for a few minutes.<\/li>\n<li>Then, <strong>add some chicken stock<\/strong>&nbsp;<em>(<a href=\"https:\/\/www.bowlofdelicious.com\/chicken-stock\/\">homemade chicken stock<\/a> is the best!).&nbsp;<\/em>Or, if you&rsquo;re making a vegan\/vegetarian sweet potato and black bean stew, add some <a href=\"https:\/\/www.bowlofdelicious.com\/scrap-vegetable-stockbroth\/\">vegetable stock<\/a>.<\/li>\n<li><strong>Add some tomatoes, black beans, and smoked paprika and bring to a boil.<\/strong> I like using diced, fire-roasted tomatoes <em>(they&rsquo;re super flavorful)<\/em>. And make sure you drain and rinse your canned black beans.<\/li>\n<li>Next, <strong>add the sweet potatoes and simmer<\/strong>. I usually peel them, but you can leave the peels on if you want even more nutrition and fiber. I recommend cutting them into approximately 1&Prime; pieces, but the bigger they are, the longer they will take to cook. If you want to cut down on cooking time, dice them smaller.<\/li>\n<li>Once the sweet potatoes are cooked, <strong>mash the stew up a bit to thicken it<\/strong>. Don&rsquo;t go crazy- you want it to be thick, but you also want some of the beans and sweet potatoes to be intact. I used a <a href=\"https:\/\/amzn.to\/2Brktaf\" target=\"_blank\" rel=\"nofollow noopener sponsored noreferrer\">potato masher<\/a> for this, but you can use an <a href=\"https:\/\/amzn.to\/31BZvjs\" target=\"_blank\" rel=\"nofollow noopener sponsored noreferrer\">immersion blender<\/a> to give it a few quick pulses if you prefer.<\/li>\n<li>Then, just <strong>stir some <a href=\"https:\/\/www.bowlofdelicious.com\/slow-cooker-whole-chicken\/\">cooked chicken<\/a> and fresh parsley in<\/strong> and let it heat up a bit! I love using leftover cooked chicken, such as from a rotisserie from the grocery store, from <a href=\"https:\/\/www.bowlofdelicious.com\/lemon-garlic-and-rosemary-whole-roast-chicken\/\">roasting a whole chicken in my dutch oven<\/a>, <a href=\"https:\/\/www.bowlofdelicious.com\/poached-chicken-breasts\/\">poached chicken breasts<\/a>, or from leftover <a href=\"https:\/\/www.bowlofdelicious.com\/crispy-oven-roasted-chicken-thighs-with-lemon-butter-and-thyme\/\">roasted chicken thighs<\/a>.<\/p>\n<p>But if you don&rsquo;t have cooked chicken available, <strong>you can use raw chicken without getting another pan dirty<\/strong>!<\/p>\n<p>Just add about 2 boneless skinless chicken breasts <em>(or boneless, skinless thighs, for a cheaper option)<\/em> to the stew when you add the sweet potatoes. Allow it to cook for about 20 minutes, until the sweet potatoes are cooked AND the chicken is completely cooked through.<\/p>\n<p>Then, remove the chicken and shred apart with two forks, and place it back into the stew. Easy peasy!<\/p>\n<h2>How to make it in your slow cooker<\/h2>\n<p>It&rsquo;s easy to make this chicken stew in your slow cooker. Just add everything EXCEPT the beans, chicken, and parsley to your crockpot. Cook on high for 3-4 hours or low for 6-8, or until the sweet potatoes are tender.<\/p>\n<p>Then mash it up a bit, and add the beans, chicken, and parsley in, and allow everything to heat up for a few more minutes.<\/p>\n<h2>Other tips and tricks<\/h2>\n<ul>\n<li>This chicken stew freezes beautifully in an airtight container or bag for up to 6 months. When defrosting and reheating, you may want to add a little bit of water or some more chicken broth since it will be extra thick.<\/li>\n<li>This meal is already very inexpensive to make, but if you want to make this meal go even further, serve it over a grain like brown rice or quinoa. This is also great if you&rsquo;re making it for a crowd.<\/li>\n<\/ul>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-16653\"
