You only need one pot for this easy, freezable meal. The trick here is saut&eacute;ing the onions and bell peppers for a long time so they get very soft and browned, so their flavor and texture doesn&rsquo;t overpower. It has almost the exact same flavor profile but it&rsquo;s a million times easier because it&rsquo;s all done in one pot. I also love that you don&rsquo;t have to heat up the oven for this!<\/p>\n\n\n\n<p>Stuffed pepper soup is the perfect recipe for the transition from summer to fall, when bell peppers are still in season <em>(and cheap!)<\/em> but it&rsquo;s starting to be chilly enough for soup.<\/p>\n\n\n\n<p>So grab a big ol&rsquo; pot and let&rsquo;s get to it! Sausage can also be used, or a vegan ground beef substitute. You may need to adjust seasonings depending on what you use here.<\/li>\n\n\n\n<li><strong>Herbs &ndash; <\/strong>fresh parsley, dried oregano, and mint <em>(if you have it)<\/em>. This is flexible &ndash; feel free to use what you have on hand.<\/li>\n\n\n\n<li><strong>Red wine &ndash; <\/strong>this is optional, but adds a little something-something.<\/li>\n\n\n\n<li><strong>Crushed tomatoes &ndash; <\/strong>diced will work just fine, or even some marinara sauce.<\/li>\n\n\n\n<li><strong>Chicken broth &ndash; <\/strong>or vegetable, or beef broth.<\/li>\n\n\n\n<li><strong>Rice &ndash; <\/strong>I used converted <em>(parboiled)<\/em> rice <em>(Ben&rsquo;s Original)<\/em>. You can use whatever kind you want. See below for more on this.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-stuffed-pepper-soup\">How to make Stuffed Pepper Soup<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li>First, <strong>saut&eacute; bell peppers and onions in olive oil. <\/strong>Cook it for a while, until the peppers and onions are very soft and browned. This will likely take at least 10 minutes.<\/li>\n\n\n\n<li><strong>Add the ground beef and herbs. <\/strong>Break the beef apart and cook until fully browned.<\/li>\n\n\n\n<li><strong>Pour in the red wine <em>(if using<\/em>), chicken broth, and tomatoes.<\/strong> Bring to a boil.<\/li>\n\n\n\n<li><strong>Stir in the rice <\/strong>and cover, then cook on low until the rice is fully cooked.<\/li>\n\n\n\n<li><strong>Stir in a little more olive oil <\/strong>after turning off the heat and serve!
