Three pounds, almost as big as my arm. Large zucchinis can be a little tough &ndash; more fibrous, thicker skin, and larger seeds &ndash; so a blended soup that pureed the cooked zucchini to smithereens was the perfect way to use it.<\/p>\n\n\n\n<p>Of course, you can make this recipe with any size zucchini, store-bought or home-grown, and even throw some yellow summer squash into the mix if you like.<\/p>\n\n\n\n<p>What makes this recipe special is all the <strong>tangy, bright flavors<\/strong> added to it that makes it perfect for warmer weather. Tangy Greek yogurt <em>(which adds healthy creaminess and a good boost of protein!), <\/em>citrusy lemon, as well as green onions and fresh dill. As a bonus, green onions cook faster than regular onions. There are two options here:<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li><a href=\"https:\/\/amzn.to\/3AtKsfn\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\"><strong>An Immersion Blender<\/strong><\/a> &ndash; this is a blending stick that blends the soup right in the pot! Super convenient, fewer dishes. I use mine all the time.<\/li><li><strong>A Standing Blender<\/strong> &ndash; a standing blender does a better job at pureeing the soup to a very smooth texture, at the cost of having to wash it. Your choice here! I personally love my <a href=\"https:\/\/amzn.to\/3CzZLWu\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">Vitamix<\/a>, but a more budget-friendly option is a <a href=\"https:\/\/amzn.to\/3Tw4qyP\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">Hamilton Beach<\/a>.<\/li><\/ol>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-zucchini-soup\">How to make Zucchini Soup<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li><strong>Prep <\/strong>your ingredients &ndash; you don&rsquo;t need to finely chop anything. Just slice the green onions into 1-inch-ish pieces, same with the celery, smash some garlic cloves, and slice or dice the zucchini.<\/li><li><strong>Saut&eacute; <\/strong>the green onions, celery, and garlic in olive oil for a few minutes in a large pot.<\/li><li><strong>Add the zucchini<\/strong> <strong>and some salt <\/strong>and stir to coat. <strong>Pour in the broth<\/strong>, bring to a boil, cover, and simmer until it&rsquo;s very tender <em>(about 10 minutes)<\/em>. <\/li><li><strong>Turn off the heat. <\/strong>Add the fresh dill, lemon zest, and lemon juice. <strong>Puree the soup <\/strong>using an immersion blender or standing blender. Cook it up until that point, then it will freeze beautifully! When you are ready to eat, defrost it and heat it up, then turn off the heat and whisk in the yogurt as directed.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1661520927283\"><strong class=\"schema-faq-question\">How to use a very large zucchini?<\/strong> <p class=\"schema-faq-answer\">Large zucchini can have tough skins and seeds. And if it separates a little, all is not lost &ndash; it will still taste delicious!<\/li>\n<li><strong>An immersion blender&nbsp;<\/strong>blends the soup right in the pot, meaning fewer dishes &ndash; yay! A standing blender will do a better job at pureeing the soup, though. Personally, I don&rsquo;t think using a blender is worth the extra dishes for a slightly smoother texture. Feel free to do what you want here.<\/li>\n<li><strong>I used a HUGE ZUCCHINI from my garden &ndash;&nbsp;<\/strong>it was three pounds! With large zucchinis like this, there are often large tough seeds. I scooped out my seeds but left the skin on and it worked perfectly in this blended soup.
