Side dishes have so much potential to steal the show of the meal, and this is no exception! <\/p>\n\n\n\n<p>We enjoyed this mushroom and wild rice pilaf with simple <a href=\"https:\/\/www.bowlofdelicious.com\/seared-salmon-with-scallion-butter\/\">seared salmon<\/a> for dinner. But I kept going in for seconds &ndash; and thirds! &ndash; of the pilaf. This would be a great side dish for Thanksgiving or any holiday, but is delicious year round and easy enough to make for a casual weeknight dinner.<\/p>\n\n\n\n<p>Mushrooms and brown butter are a match made in heaven <em>(and this is a twist on one of my favorite other recipes &ndash; <a href=\"https:\/\/www.bowlofdelicious.com\/one-pot-orzo-mushrooms\/\">one pot brown butter orzo and mushrooms<\/a> &ndash; made gluten-free and with a few other changes)<\/em>. The sweet and plump raisins and crunchy slivered almonds will have you wanting to eat this all the time &ndash; as a side, or even as a light main course!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ingredients-and-substitutions\">Ingredients and Substitutions<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Wild Rice Blend<\/strong> &ndash; I love&nbsp;<a href=\"https:\/\/amzn.to\/3L6z1xq\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">RiceSelect Royal Rice Blend<\/a>&nbsp;because it has a great combination of textures and flavors and is fast to cook. Keep in mind: other blends of wild rice, and especially pure wild rice,&nbsp;<strong>may take longer to cook or require different liquid ratios<\/strong>. Check the package directions and adjust the amount of broth and time to cook accordingly.<\/li><li><strong>Sliced Mushrooms &ndash; <\/strong>I used baby portobello, or cremini, since they are widely available and pretty flavorful. Use whatever kind you want, or a mix.<\/li><li><strong>Butter &ndash; <\/strong>or a vegan substitute, or olive oil in a pinch <em>(and skip the browning part).<\/em><\/li><li><strong>Broth &ndash; <\/strong>chicken or vegetable will do, or water in a pinch.<\/li><li><strong>Raisins &ndash; <\/strong>or dried cranberries.<\/li><li><strong>Fresh oregano &ndash; <\/strong>or dried, or thyme if you prefer.<\/li><li><strong>Slivered almonds &ndash; <\/strong>or sliced almonds, or another nut of choice <em>(like pecans or walnuts). <\/em>You can also use sunflower or pumpkin seeds for a nut-free version but still enjoy that crunch <em>(or just omit entirely)<\/em>.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-mushroom-wild-rice-pilaf\">How to make Mushroom Wild Rice Pilaf<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>Start by <strong>browning the butter <\/strong>in a large pot<em> <\/em>with a lid <em>(such as a Dutch oven)<\/em>. Melt the butter over medium-high heat, allow it to foam, then stir it constantly until it develops a brown color.<\/li><li>Once the butter is brown, <strong>immediately add the mushrooms<\/strong> <em>(which will stop the butter from burning)<\/em>, salt, and pepper, and saut&eacute; until deeply brown <em>(here&rsquo;s more on <a href=\"https:\/\/www.bowlofdelicious.com\/sauteed-mushrooms\/\">how to perfectly brown mushrooms<\/a>)<\/em>.<\/li><li><strong>Add the raisins, almonds, oregano, and wild rice<\/strong>, and stir to coat everything.<\/li><li><strong>Pour in the broth<\/strong>, bring to a boil, cover, and simmer on low until rice is cooked.<\/li><li>Finally, <strong>turn off the heat and allow the rice to stand covered<\/strong> for a little while &ndash; this will help make it fluffier. <\/li><\/ol>\n\n\n\n<figure class=\"wp-block-image size-full is-style-default\"><img decoding=\"async\" width=\"1200\" height=\"1371\" data-pin-description=\"Mushroom wild rice pilaf is a delicious side dish or light meal packed with flavor from juicy raisins, crunchy almonds, oregano, and brown butter.
