I made this recipe completely by accident during the crazy winter storm in Texas in February that left <a href=\"https:\/\/en.wikipedia.org\/wiki\/2021_Texas_power_crisis\" target=\"_blank\" rel=\"noreferrer noopener\">millions of people without electricity<\/a> or means to get groceries. With super limited food in my fridge and pantry, I played around with what I had and this coconut chicken curry was born!<\/p>\n\n\n\n<p>I don&rsquo;t think I ever would have used a broccoli stalk like this otherwise, but y&rsquo;all&hellip; they are DELICIOUS. They have a mild and sweet taste &ndash; not bitter like the florets. They&rsquo;re crunchy and the perfect addition to this curry recipe. They kind of remind me of water chestnuts. And they&rsquo;re <a href=\"https:\/\/www.livestrong.com\/article\/536937-do-broccoli-stems-have-nutritional-value\/\" target=\"_blank\" rel=\"noreferrer noopener\">just as healthy as the florets<\/a>!<\/p>\n\n\n\n<p>You can use other veggies if you like <em>(more on that later)<\/em> but using broccoli stems is a great way to add nutrition and save on food waste! And this coconut chicken curry recipe hits so many dietary restrictions such as <strong>dairy-free, gluten-free, paleo, and whole30<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ingredients-and-substitutions\">Ingredients and Substitutions<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Coconut Oil <\/strong>&ndash; another oil like olive or canola can also be used, or butter or ghee.<\/li><li><strong>Red onion &ndash; <\/strong>or yellow, or white.<\/li><li><strong>Garlic &ndash; <\/strong>fresh garlic is recommended here, thinly sliced.<\/li><li><strong>Curry Powder &ndash; <\/strong>I used <a href=\"https:\/\/amzn.to\/31bfhUQ\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">Morton and Bassett curry powder<\/a>. There are so many different kinds of curry powder varying in flavor and spice level &ndash; any will work here.<\/li><li><strong>Canned Coconut Milk &ndash; <\/strong>I recommend full-fat. This is different than coconut milk you will find in the dairy substitutes area near the milk &ndash; <a href=\"https:\/\/amzn.to\/399XT79\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">canned coconut milk<\/a> is thicker and found in the aisle with other East and Southeast Asian ingredients.<\/li><li><strong>Boneless Skinless Chicken Breasts &ndash; <\/strong>thighs will also work. This will toast the spices in the curry powder and develop their flavors.<\/li><li><strong>ADD coconut milk <\/strong>to the skillet and bring to a gentle simmer.<\/li><li><strong>ADD the chicken, veggies, lime zest, and salt. <\/strong>Turn heat down to medium-low or low to keep a gentle simmer and continue simmering <strong>uncovered<\/strong> stirring occasionally until the chicken is fully cooked <em>(about 10 minutes)<\/em>. <em>Note: simmering uncovered will help thicken the sauce.<\/em><\/li><li><strong>Turn off heat and STIR IN cilantro\/basil and lime juice. <\/strong>Serve over basmati rice or another rice\/grain like quinoa.<\/li><\/ol>\n\n\n\n<figure class=\"wp-block-image size-full\"><a href=\"https:\/\/www.bowlofdelicious.com\/wp-content\/uploads\/2021\/03\/coconut-chicken-curry-process-2.jpg\"><img decoding=\"async\" width=\"1200\" height=\"2400\" data-pin-description=\"This easy 25 minute recipe for Coconut Chicken Curry features thinly sliced chicken breasts poached directly in a creamy coconut milk curry sauce, with sliced carrots and broccoli stems, and saut&eacute;ed onions and garlic, flavored with lime juice, cilantro and basil, and curry powder. You can use diced potatoes, summer squash or zucchini, broccoli florets, cauliflower florets and\/or stems&hellip; <strong>really anything you want<\/strong>. Bell pepper would be great saut&eacute;ed with the onions and garlic.
