It&rsquo;s a <strong>no-knead, yeast-free<\/strong> quick bread, everything is mixed up in <strong>one bowl for easy clean-up<\/strong>, and it&rsquo;s <strong>healthy and nutritious<\/strong>.<\/p>\n\n\n\n<p>It&rsquo;s also <strong>egg-free<\/strong>, and <strong>easy to adapt to be vegan<\/strong> if you use a plant-based milk.<\/p>\n\n\n\n<p>Most New England brown bread recipes require setting the bread in a baking dish of water to steam it, and baking it or steaming on the stovetop. <strong>This version is a bit easier and instead covers the loaf pan tightly with foil to trap the steam inside<\/strong>, so you don&rsquo;t need to worry about giving it a steam bath. <\/p>\n\n\n\n<p>And this recipe is made from scratch as an alternative to <a href=\"https:\/\/amzn.to\/3nxwv7P\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">canned brown bread<\/a> <em>(yes, it&rsquo;s a thing!)<\/em>, and from scratch is always better.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ingredients-in-brown-bread\">Ingredients in Brown Bread<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Cornmeal<\/strong> &ndash; I prefer stone ground because it has a great texture.<\/li><li><strong>Rye Flour<\/strong><\/li><li><strong>Whole Wheat Flour<\/strong><\/li><li><strong>Baking Powder, Baking Soda, and Kosher Salt<\/strong><\/li><li><strong>Maple Syrup<\/strong> &ndash; can be omitted if you like, or substituted with another sweetener like sugar, brown sugar, or honey.<\/li><li><strong>Molasses<\/strong><\/li><li><strong>Whole Milk<\/strong> &ndash; this can be substituted with plant-based milk, buttermilk, or low-fat milk.<\/li><li><strong>Vanilla Extract<\/strong><\/li><li><strong>Raisins <\/strong>&ndash; these are optional. You can also use currants or another dried fruit. For the purists out there, feel free to use a 29 oz. coffee can <em>(or something similar) <\/em>to bake this instead of a loaf pan.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-how-is-this-different-from-irish-brown-bread\">How is this different from Irish Brown Bread?<\/h3>\n\n\n\n<p>Irish brown bread uses a mixture of white and whole wheat flours, rather than using rye and cornmeal, and is baked in a round loaf similar to soda bread. Here&rsquo;s a great recipe for <a href=\"https:\/\/ethnicspoon.com\/irish-brown-bread\/\" target=\"_blank\" rel=\"noreferrer noopener\">Irish Brown Bread<\/a> if you want to give it a try!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-my-bread-collapsed-in-the-center-help\">My bread collapsed in the center- help!<\/h3>\n\n\n\n<p>This batter is quite wet and since the steam gets trapped in, don&rsquo;t worry if it collapses a little bit in the center as long as it&rsquo;s cooked all the way through!
