This chicken gnocchi soup has all the <strong>flavors of chicken pot pie, with an Italian twist<\/strong>, but it&rsquo;s SO much easier to make. <\/p>\n\n\n\n<p>This soup is quite similar to my <a href=\"https:\/\/www.bowlofdelicious.com\/easy-chicken-and-dumplings-from-scratch\/\">chicken and dumplings<\/a> <em>(you all LOVE that recipe with over 100 five-star ratings!)<\/em>, but <strong>this one is even faster and easier<\/strong> because you use prepared gnocchi instead of making dumplings from scratch!<\/p>\n\n\n\n<p>You&rsquo;re going to love the flavor of thyme and oregano, the creamy and luscious thick texture, and the rich flavor of this chicken gnocchi soup. You can also <a href=\"https:\/\/www.bowlofdelicious.com\/poached-chicken-breasts\/\">poach chicken breasts<\/a>, <a href=\"https:\/\/www.bowlofdelicious.com\/slow-cooker-whole-chicken\/\">cook a whole chicken in a slow cooker<\/a>, or use leftover <a href=\"https:\/\/www.bowlofdelicious.com\/lemon-garlic-and-rosemary-whole-roast-chicken\/\">roast chicken<\/a>.<\/li><li><strong>Potato Gnocchi &ndash; <\/strong>I used <a href=\"https:\/\/amzn.to\/3iRRgIR\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">store-bought potato gnocchi<\/a> for this. You can find it in the pasta aisle in your grocery store. Feel free to use <a href=\"https:\/\/www.bowlofdelicious.com\/whole-wheat-ricotta-gnocchi\/\">ricotta gnocchi<\/a> or <a href=\"https:\/\/www.platingsandpairings.com\/easy-homemade-potato-gnocchi\/\" target=\"_blank\" rel=\"noreferrer noopener\">homemade potato gnocchi<\/a>. For a low carb version, try <a href=\"https:\/\/amzn.to\/3iXiOMR\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">pre-made cauliflower gnocchi<\/a>, and use gluten-free gnocchi if needed.<\/li><li><strong>Spinach &ndash; <\/strong>I used baby spinach, which I roughly chopped. You can use mature fresh spinach, or frozen <em>(thawed and drained)<\/em> if you prefer, or even another green like chopped kale.<\/li><li><strong>Chicken stock &ndash; <\/strong>I used <a href=\"https:\/\/www.bowlofdelicious.com\/chicken-stock\/\">homemade chicken stock<\/a>. <a href=\"https:\/\/www.bowlofdelicious.com\/scrap-vegetable-stockbroth\/\">Vegetable stock<\/a>, or a boullion based broth, will work fine.<\/li><li><strong>Half and half &ndash; <\/strong>you can use heavy cream for a richer taste, or whole milk for a lighter version. You can use low-fat or skim milk in a pinch, but be aware that the texture will not be as rich.<\/li><li><strong>Herbs: Oregano and Thyme &ndash; <\/strong>One or the other is fine, or a pre-mixed Italian seasoning will work as well.<\/li><li><strong>Veggies: Garlic, Onion, Carrots, and Celery<\/strong><\/li><li><strong>All-purpose flour &ndash; <\/strong>this is used to make a roux to thicken the soup. They may be a little stuck together- try to separate them out before adding to the soup.<\/li><li>Finally, <strong>stir in the shredded chicken, half and half, chopped spinach, and parmesan cheese. <\/strong>Continue heating and stirring until the cheese is melted, the spinach is wilted, and the chicken is heated through. They come out a bit crunchy, which I liked. But <strong>if you prefer really soft veggies<\/strong>, I recommend either saut&eacute;ing in the beginning for a longer time until they are really soft, or really finely dicing the onion and celery and grating the carrot <em>(reducing their size will decrease the time it takes to soften them).<\/em><\/li><li><strong>Wait until the end to add salt and pepper<\/strong> &ndash; the chicken stock you use, the cooked chicken, and the parmesan cheese all will add salt and flavor to the soup, so it&rsquo;s impossible to estimate the exact amount you&rsquo;ll need. You won&rsquo;t likely need much, so just wait until you can taste it at the end.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-can-you-freeze-it\">Can you freeze it?<\/h2>\n\n\n\n<p>Yup! Chicken gnocchi soup freezes really well. Just wait for it to cool a bit, then freeze it in an airtight container for up to 6 months.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-are-the-leftovers-good\">Are the leftovers good?<\/h2>\n\n\n\n<p>Oh my goodness YES! That makes this chicken gnocchi soup a <strong>great make ahead recipe or meal prep<\/strong> for the week. <\/p>\n\n\n\n<p>This batch makes a lot.
