It may be a million degrees here in Texas, and it&rsquo;s not even close to fall, but the other night I made <a href=\"https:\/\/www.bowlofdelicious.com\/instant-pot-pumpkin-chili\/\">pumpkin chili<\/a> with this cornbread and I have no regrets about it!<\/p>\n\n\n\n<p>Whether you need a <strong>side for chili, or your favorite BBQ food, or you need an easy dish to take to a potluck<\/strong>, this Jalape&ntilde;o Cornbread is sure to be a winner.<\/p>\n\n\n\n<p>And it&rsquo;s really easy to <strong>make it mild or spicy<\/strong>, depending on your preferences! I used mild jalape&ntilde;os, which meant <strong>my kids gobbled it up<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients and Susbstitutions<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Pickled Jalape&ntilde;os and the brine<\/strong>&ndash; I used <a href=\"https:\/\/www.bowlofdelicious.com\/quick-pickled-jalapenos\/\">homemade quick pickled jalape&ntilde;os<\/a>, but normally I would use store-bought. You can usually find store-bought in both mild and spicy forms. As a substitute, you can use fresh diced jalape&ntilde;os and omit the brine in the recipe, or use canned diced green chiles.<\/li><li><strong>Cornmeal- <\/strong>I recommend stone-ground, but any cornmeal will do. I recommend warming it up in the microwave if it&rsquo;s been in the fridge.<\/p>\n\n\n\n<p>You can also freeze it- I recommend flash freezing the sliced cornbread on a baking sheet for 30 minutes, then removing the pieces and placing in a plastic bag or airtight container. That way, you can grab pieces individually when you need them.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Recommended Equpiment<\/h2>\n\n\n\n<p>I recommend an <a aria-label=\"undefined (opens in a new tab)\" href=\"https:\/\/amzn.to\/2Zq5KsI\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">8&times;8 baking pan<\/a>, but a <a aria-label=\"undefined (opens in a new tab)\" href=\"https:\/\/amzn.to\/3epEwqt\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">9&times;9<\/a> or similar size will do. I actually don&rsquo;t own any square baking pans <em>(whoops, food blogger fail haha!)<\/em>. So I used a random small casserole dish I got a Homegoods that&rsquo;s about 10&Prime; by 7&Prime; which worked well.<\/p>\n\n\n\n<p>You could also use a 10-inch well-seasoned cast iron skillet for this. Or, add the batter to a muffin pan for jalape&ntilde;o corn muffins!<\/p>\n\n\n\n<p>You&rsquo;ll also need a <a aria-label=\"undefined (opens in a new tab)\" href=\"https:\/\/amzn.to\/38XLK3K\" rel=\"noreferrer noopener sponsored nofollow\" target=\"_blank\">whisk<\/a> and a <a aria-label=\"undefined (opens in a new tab)\" href=\"https:\/\/amzn.to\/38VZRqD\" rel=\"noreferrer noopener sponsored nofollow\" target=\"_blank\">large bowl<\/a>.
