Things that I would normally throw away are given new life in this DELICIOUS and EASY recipe for homemade chicken stock in bulk. It&rsquo;s such a great way to reduce food waste and save money!<\/p>\n<p>In this post, I&rsquo;ll explain:<\/p>\n<ul>\n<li>What the heck the <strong><a href=\"#difference\">difference between stock and broth<\/a><\/strong> actually is.<\/li>\n<li><strong><a href=\"#freeze\">What kinds of scraps you should freeze for stock<\/a><\/strong> and how to store them.<\/li>\n<li><a href=\"#howto\">How to make chicken stock<\/a> on the <strong>stovetop,<\/strong> in your <strong>slow cooker<\/strong>, or in you <strong>instant pot\/pressure cooker<\/strong>.<\/li>\n<li>How to <strong><a href=\"#strain\">EASILY strain the stock<\/a><\/strong> when it&rsquo;s done.<\/li>\n<li><strong><a href=\"#store\">How to store the chicken stock<\/a><\/strong> in your freezer or refrigerator.<\/li>\n<li><strong><a href=\"#recipes\">What kinds of recipes<\/a><\/strong> you can use the homemade stock in.<\/li>\n<\/ul>\n<p>Here we go!<\/p>\n<h2 id=\"difference\">What is the difference between stock and broth?<\/h2>\n<p>In a nutshell, stock is better, but both can usually be used interchangeably.<\/p>\n<p>So if you&rsquo;re about to cook a recipe for, let&rsquo;s say, chicken noodle soup, and it requires chicken stock, don&rsquo;t worry: you can use the chicken broth you buy at the store for it.<\/p>\n<p>BUT. <strong>Here&rsquo;s why chicken stock is so much better than broth.<\/strong><\/p>\n<p><strong>Stock is made with bones<\/strong>, whereas broth is usually made with meat. <strong>Stock is cooked for a long time<\/strong>, whereas broth can be cooked for less time.<\/p>\n<p>What does this mean?<\/p>\n<p>There&rsquo;s an awesome ingredient hiding in the bones&nbsp;<em>(whether you&rsquo;re making chicken, beef, or pork stock)-&nbsp;<\/em><strong>collagen.<\/strong> When cooked for a long time, <strong>the collagen breaks down<\/strong> and is extracted from the bones, <strong>which turns into gelatin<\/strong>. Yes, the same kind of gelatin in Jell-O.<\/p>\n<p>A good stock will be full of gelatin, and may actually solidify and turn into a Jell-O like consistency when you refrigerate it.&nbsp;<\/p>\n<p>When a stock is full of gelatin, it adds more <strong>flavor, <a href=\"https:\/\/paleoleap.com\/all-about-gelatin-and-collagen\/\" target=\"_blank\" rel=\"noopener noreferrer\">nutrition<\/a><\/strong>&nbsp;<em>(why do you think bone broth is so popular? It&rsquo;s literally just stock),&nbsp;<\/em>and <strong>body<\/strong> to the stock. Heck- people even buy <a href=\"https:\/\/amzn.to\/2VKRBGy\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">unflavored gelatin<\/a> to add to recipes when they don&rsquo;t have a good homemade stock available.<\/p>\n<p>When you start using homemade chicken stock in your recipes, you&rsquo;ll notice <strong>a huge different in taste and richness and texture<\/strong>. When I <a href=\"https:\/\/www.bowlofdelicious.com\/lemon-garlic-and-rosemary-whole-roast-chicken\/\">roast a whole chicken<\/a>, or have leftover bones from <a href=\"https:\/\/www.bowlofdelicious.com\/crispy-oven-roasted-chicken-thighs-with-lemon-butter-and-thyme\/\">roasted chicken thighs<\/a>, or even just the remains from a rotisserie chicken from the grocery store, I toss the bones into the bag. I try and remove large pieces of skin before adding it to the bag, since that will mostly just add fat to the broth rather than collagen\/gelatin.<\/p>\n<p>I recommend sticking to the classic veggies- onions, celery, and carrots- for homemade chicken stock. The flavors are simple and won&rsquo;t overpower. You can experiment with other kinds of veggies, but <strong>m<\/strong><strong>ake sure you DON&rsquo;T use vegetables with a ton of overpowering flavor<\/strong>, such as broccoli, bell peppers, cauliflower, kale, brussels sprouts, etc.&nbsp;<\/p>\n<p>Once the bag is full, you&rsquo;re ready to make stock! <strong>And don&rsquo;t throw out that bag<\/strong>&ndash; just place it back in your freezer when you&rsquo;ve emptied it out for another round. It&rsquo;s totally reusable.<\/p>\n<h2 id=\"howto\">How to make homemade chicken stock from freezer scraps<\/h2>\n<p>It&rsquo;s SO easy to make this homemade chicken stock recipe on your stovetop, in your slow cooker, or in your pressure cooker, with only a few minutes of prep work. This won&rsquo;t work with a mini instant pot, unless you use only half of the contents of the bag.<\/li>\n<li>Cover the contents in the pot with water, making sure to NOT go past the &ldquo;max fill&rdquo; line.<\/li>\n<li>Add some whole peppercorns <em>(about 1 teaspoon)<\/em>, a bay leaf, and a teaspoon of kosher salt <em style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">(if you want)<\/em><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">.<\/span><\/li>\n<li>Place the cover on and make sure the valve is in &ldquo;sealed&rdquo; position.<\/li>\n<li>Set pressure to manual on high for 45 minutes. It will take about 20-30 minutes to come to pressure.<\/li>\n<li>Allow to naturally release pressure for 30 minutes, then move the sealing valve to &ldquo;venting&rdquo; and wait for the float valve to sink down before opening.<\/li>\n<li>Open the pressure cooker, turn it off, and allow to cool for 20 minutes so it&rsquo;s easier to strain.<\/li>\n<\/ol>\n<h2 id=\"strain\">The easiest way to strain chicken stock<\/h2>\n<p>Now that you&rsquo;re done cooking the stock, you have to strain it so it&rsquo;s just liquid. Then, tie up the bag and toss it in the trash.<\/p>\n<p>Next, place the container you want to store the chicken stock in next to the pot in the sink. I like reusing those containers you get soup in from restaurants- kind of like <a href=\"https:\/\/amzn.to\/2EECh3G\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">these<\/a>.<\/p>\n<p><strong>Place a <a href=\"https:\/\/amzn.to\/2WuMMka\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">mesh sieve<\/a> directly over the container<\/strong> &ndash; use a small one if you&rsquo;re using small containers, and a larger one for a larger container.<\/p>\n<p>Then, <strong>use a <a href=\"https:\/\/amzn.to\/2EGcIiL\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">ladle<\/a> to scoop the chicken stock into the container through the sieve<\/strong>, which will catch any remaining solid pieces lingering in the liquid. If you want REALLY clear chicken stock, you can add a layer of <a href=\"https:\/\/amzn.to\/2WcBwtw\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">cheesecloth<\/a> inside the sieve.<\/p>\n<p>If you plan on freezing the stock&nbsp;<em>(which I&rsquo;ll get to in a second)<\/em>, <strong>make sure you leave a little bit of room at the top of the container, since it will expand in the freezer<\/strong>. I usually leave about 1 inch.<\/p>\n<h2 id=\"store\">How to store chicken stock in the freezer or refrigerator<\/h2>\n<p>If you know you&rsquo;re going to use the chicken stock for a recipe in the next few days, the easiest thing to do is to keep it in your refrigerator. You can keep it in there for about 4 days.<\/p>\n<p>But I almost always end up freezing my chicken stock so I always have a stash to use. You can freeze it for up to 6 months!<\/p>\n<p><strong>There are three ways you can defrost frozen chicken stock.<\/strong><\/p>\n<ol>\n<li>Take it out 24-48 hours before you want to use it and place it in your fridge. It should be completely defrosted, or close to, by then.<\/li>\n<li>Microwave it for 5-10 minutes until it&rsquo;s melted.<\/li>\n<li>Or, you can simply run hot water over the container until it&rsquo;s loose, then pop it out and place the big frozen chunk of chicken stock in a pot to heat up on the stove. Delicious! And did you know- you can actually use chicken stock in most recipes that require beef broth, too!
