Here&rsquo;s what to do with it! Make this delicious tortilla soup that&rsquo;s easy to make in <strong>one pot, with 20 minutes of prep, and is freezable<\/strong>. <\/p>\n\n\n\n<p><strong>I like to make a batch and freeze half of it<\/strong> &ndash; come those cold January winter nights, it&rsquo;s a welcome item to run into in your freezer for a quick and easy, warm and cozy dinner.<\/p>\n\n\n\n<p>This batch was made with a leftover half smoked chicken from my favorite BBQ food truck, <a href=\"https:\/\/www.crimsoncreekbbq.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Crimson Creek BBQ<\/a>, in Austin. I got a little extra and even made smoked chicken stock from the carcass <em>(and some leftover rib bones)<\/em> for the base of the soup. HIGHLY RECOMMEND, if you have the time <em>(I&rsquo;ll explain how below).<\/em><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ingredients-and-substitutions\">Ingredients and Substitutions<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Smoked Chicken or Turkey &ndash; <\/strong>the star of the soup! You can make this recipe with any other cooked shredded chicken or turkey if you like.<\/li><li><strong>Bell Pepper <\/strong>&ndash; any color will do <em>(I used yellow)<\/em><\/li><li><strong>Jalape&ntilde;o peppers &ndash; <\/strong>leave all or some of the seeds in for a spicy version. You can sub with diced canned chipotle chiles in adobo, which will also enhance the smoky flavor and up the spicy level, if you like.<\/li><li><strong>Onion<\/strong><\/li><li><strong>Garlic Powder, Cumin, Smoked Paprika, and Ground Coriander &ndash; <\/strong>feel free to leave out the coriander if you don&rsquo;t have it, and use fresh garlic instead if you prefer.<\/li><li><strong>Tomato Paste<\/strong><\/li><li><strong>Chicken Stock\/Broth &ndash; <\/strong><a href=\"https:\/\/www.bowlofdelicious.com\/chicken-stock\/\">homemade chicken stock<\/a>, store bought, or bouillon based is fine.<\/li><li><strong>Canned black beans<\/strong><\/li><li><strong>Canned diced tomatoes &ndash; <\/strong>preferably fire roasted<\/li><li><strong>Frozen corn &ndash; <\/strong>or fresh<\/li><li><strong>Fresh lime juice<\/strong><\/li><li><strong>Fixings for topping<\/strong> &ndash; crispy tortilla strips or chips, avocado, cilantro, lime wedges, sour cream, shredded cheese, diced onion, etc.<\/li><\/ul>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" width=\"1200\" height=\"1800\" data-pin-description=\"This smoked chicken tortilla soup is a great way to use up leftover smoked chicken or leftover smoked turkey! So if you have time, let it go for longer. What is masa?<\/h3>\n\n\n\n<p>Masa is flour made from corn. You may see it in your grocery store under the brand name <a href=\"https:\/\/amzn.to\/2IJFtjR\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">Maseca<\/a>, or it might be labeled &ldquo;<a href=\"https:\/\/amzn.to\/36U1IeF\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">masa harina<\/a>.&rdquo; You can use instant or regular in this recipe. How do I make the crispy tortilla strips from scratch?<\/h3>\n\n\n\n<p>It&rsquo;s easy! Just cut corn tortillas into strips and fry in canola or vegetable oil in a cast iron skillet. I gets even better after the flavors develop more.<\/p>\n\n\n\n<p><strong>You can refrigerate it <\/strong>in an airtight container for about 3-5 days and enjoy throughout the week for lunch.<\/p>\n\n\n\n<p><strong>You can freeze it <\/strong>in an airtight container for up to 6 months. I like to run hot water over the container to loosen it, and just plop the frozen block of soup directly into a pot. Then I a little bit of water and heat to defrost directly on the stove.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-4-do-i-have-to-use-smoked-chicken\">4. Do I have to use smoked chicken?<\/h3>\n\n\n\n<p>Nope! You can definitely <strong>make this smoked tortilla soup recipe using any shredded cooked chicken or turkey<\/strong>, such as rotisserie, leftover <a href=\"https:\/\/www.bowlofdelicious.com\/lemon-garlic-and-rosemary-whole-roast-chicken\/\">roast chicken<\/a>, or <a href=\"https:\/\/www.bowlofdelicious.com\/smoky-mexican-pulled-chicken\/\">shredded Mexican chicken<\/a>. Just make a couple of adjustments to <strong>intensify the smoky flavor in other ways<\/strong>.<\/p>\n\n\n\n<p>To get more smoky flavor, add a little more smoked paprika and\/or use chipotle chiles instead of jalape&ntilde;os.
