This soup will definitely stay in the rotation! We added quite a bit of pepper and garlic powder and some salt to the soup towards the end to give more flavor. Can’t wait to make this again!

I’ve made this soup multiple times and loved it every time! First I made it as written and it was perfect, then I riffed by switching up the meat type to ground chicken breast and adding more chopped peppers and it was still perfect. I made a batch for my freezer prior to my maternity leave too, so needless to say I have been so thankful to have this recipe in the rotation. With fall approaching, I think it’s time for another batch on the stove!
