I made this soup today! It was delicious and turned out great! I almost doubled it and had enough to put some in the freezer for Thanksgiving weekend and some for my mother-in-law! Thanks so much for the recipe.

I would probably use oat milk for this – the extra creamy kind. It has a similar flavor to regular milk. Almond milk will probably be a not so great flavor with it. A can of coconut milk could work to make it really creamy (but it will have a slight coconut taste to it!). Hope that helps!

I’ve made it yesterday. Used 400g of slow-cooked shredded chicken tendies, made a wannabe European version of half and half by premixing 100g of 30% cream and 150g of 0% milk. Used 15g of cornstarch instead of flour. It’s a super delicious and comfy meal, and actually better the next day.

This recipe is great! I was looking for a way to use our frozen Thanksgiving turkey leftovers and this fit the bill. To save on prep time I used pre-chopped veggies from the freezer section for everything – the mirepoix, mixed veggies, and spinach. Since I forgot to add the flour to the saute, instead it got whisked into my whole milk. The milk and flour in this recipe give the base such a lush, comforting consistency! At the end I added the juice of a small lemon for some freshness, and paired with a sauvignon blanc – delish!
