Recipe was so close to the recipe I was starting to put together on my own, I went with this instead. It’s like eating creaming pumpkin pie filling without the crust (so add some graham crackers or ginger snaps as recommended.
Definitely needed more sugar though. At least 1/4 more just because of the 20% volume increase from regular pudding recipes. I know people that like their pudding sweeter, and because of pumpkin’s character, +1/2 cup wouldn’t be terrible either.
I also wish I had done 2:1 brown to white sugar though… I will next time.

This could easily be the best dish this Thanksgiving. My husband is on a soft food diet, and this is one of the two foods he’ll be able to eat.

The recipe couldn’t be simpler, and I even used your pumpkin pie spice mix recipe. This will be a regular at our house. Thank you so much for creating it!

(I did alter a bit).Fabulous. Creamy. Light, not overpowering pumpkin flavor which I appreciate. Made as is except, used evaporated milk equal to milk amount to create creaminess and equal portions. Added 1/2 tsp more vanilla and 1 tsp more of pumpkin pie spice. (just because I like it). It did take 8 minutes of continuous whisking to reach desired thickness for me. This yielded 8 Ramekins filled 3/4 full for me, just FYI. LOVE ❤️ LOVE ❤️ LOVE! Thank you for a great recipe!

Hi Elizabeth,

I did try the evaporated milk, worked great, I probably did 3/4 cups of sugar, I also used 26 oz of pumpkin. It turned out well.

Hm, I’m afraid I can’t help you with that. It’s possible you could use a recipe like this (https://amindfullmom.com/baked-lemon-pudding/) and adjust to use pumpkin instead of lemon? I think it would be worth experimenting with! If you try it out, I’d love to know how it turns out for you.

Yes, this should work just fine! I just did a quick google search and it seems that many recipes for homemade pudding do call for evaporated milk instead of whole and it yields a creamier, richer pudding. If you try it, I’d love to know how it turns out – Good luck!

Very delicious!!! Unfortunately the pudding did not set as much as I would have liked even after whisking longer than the instructions said. I did use Lactaid milk but next time, I think I would just use a bit less milk to see how it does. Love the flavor and the presentation is great with minimal effort.
