Thanks for your concern. The recipe ingredients are intentionally vague with multiple suggestions, some of which are vegetarian/vegan and some not. So for the fat, you can use olive oil (butter for vegetarian), and the stock, use vegetable stock, to make this vegetarian or vegan. Hope that helps!

Last night I cooked your Chrispy chicken thighs, my summer squash,and mashed potatoes with your mushroom gravy. It was all delicious! And easy! I removed the skin after cooking, and the chicken was very moist and nicely flavored. I used butter and chicken broth for the gravy, and it made the whole meal special! Please keep posting your wonderful recipes.
