Allow me to introduce you to an actually delicious healthy pumpkin bread, made with 100% whole wheat flour, sweetened with only maple syrup, and baked with extra-virgin olive oil. Don’t be fooled; it’s not what you think. This loaf cooks up incredibly moist and fluffy. It’s just sweet enough! The pumpkin and pumpkin pie spice (a whole tablespoon!) are complemented, not overpowered, by the subtly sweet maple syrup. And it’s so easy and fast to prep with one bowl – no mixers required!

My entire family was surprised to realize we prefer this not-too-sweet, healthy pumpkin bread to the more traditional, sweet, cake-like treat you usually find! And I feel good about serving it as a healthy option for breakfast or snacks to my children (and myself!). I mean, it even has vegetables in it, right?

This easy one pot Mujadara is a twist on a popular Middle Eastern comfort food where warmly spiced lentils and rice are the base and deeply caramelized onions are the star. Recipes for Mujadara often use three different pots for caramelizing the onions, cooking the lentils, and cooking the rice. Here, we’re doing everything in one pot. It’s incredibly inexpensive to make, super nutritious and healthy, high protein and high fiber, and absurdly delicious. It also happens to be completely vegan/plant-based, if that’s your thing!

In my research for this recipe, I found most Mujadara recipes not only use three separate pots, but also use white rice. I love white rice, but here I’ve opted for brown rice. This not only adds nutrition and fiber, but it cooks in the same amount of time as the soaked lentils. Which makes the Mujadara easy to cook in one pot with less hands-on time. The nutty, earthy flavor of brown rice works really well here.

The caramelized onions are a must here, so be sure to plan ahead. It will take about 40 minutes to caramelize the onions properly, but it’s worth it and pretty hands-off.

These Oatmeal Butterscotch Cookies with Walnuts are the perfect way to ease into fall baking. The sweet, caramel-ey flavor of butterscotch is so good in an oatmeal cookie – much better than raisins in my opinion. The walnuts add the perfect crunch, but can be left out if you prefer. I like to keep any leftover cookies in my freezer – they’re absolutely delicious cold, but can be warmed in the microwave for a quick and easy treat with coffee or tea on a crisp day!

My brother-in-law brought a batch of these last time he visited and I immediately knew I had to share this recipe with you all. I’m not usually drawn to an oatmeal cookie personally, but these really are special. You’re going to love them – and thanks, Daniel, for sharing this recipe with us!

These oatmeal butterscotch cookies were a wonderful thing to celebrate my kids starting school (worthy of celebration for many reasons, including my ability to get back into the swing of getting new recipes to you!).

They absorb all those flavors, as well as turn a gorgeous golden-brown color and crisp to perfection from soaking up some of the onion and garlic infused olive oil as it roasts.

I like making these year-round, but they’re especially festive around the holidays. I’ve got a batch in my freezer right now just waiting to make an appearance at a Christmas party in a few weeks… and it’s taking all my self control to not dive in and grab one (or four) to much on right now!

These are healthier than many other cookies since they use half the amount of sugar than your average cookie.

Have you ever wondered how to cook those adorable, tiny honeynut squash? Roasted Honeynut Squash is the perfect fast, easy, delicious autumn or winter side dish! Honeynut squash is like the smaller cousin of butternut squash, with a sweeter and more concentrated flavor. Its small size means a more delicate (and edible!) skin with a much faster cooking time. It only takes 20 minutes to roast these, so it’s easy to stick them in the oven while the turkey is resting for Thanksgiving dinner.

Because the flavor of honeynut squash is so naturally delicious, I chose to roast these simply with olive oil, salt, and pepper. But it’s so easy to experiment with other flavors here – a sprinkling of cinnamon, a brush of pure maple syrup… with such an easy, no-fuss recipe, it’s hard to mess up no matter what you add!

Another joy of the small size of honeynut squash is that each squash is a single serving. You can follow the cooking directions for this for any number of squash – so if it’s just you, pop one in the oven, and if you’re cooking for a crowd, roast a bunch so everyone can put a cute little roasted squash half on their plates.

Stuffed Pepper Soup is everything you LOVE about stuffed peppers without the hassle! You only need one pot for this easy, freezable meal. The trick here is sautéing the onions and bell peppers for a long time so they get very soft and browned, so their flavor and texture doesn’t overpower. Ground beef and rice add substance to the soup for a complete, absolutely delicious meal (that also happens to be gluten free and dairy free)!

This stuffed pepper soup uses almost the exact same ingredients as Greek Stuffed Peppers (Gemista). It has almost the exact same flavor profile but it’s a million times easier because it’s all done in one pot. I also love that you don’t have to heat up the oven for this!

Stuffed pepper soup is the perfect recipe for the transition from summer to fall, when bell peppers are still in season (and cheap!) but it’s starting to be chilly enough for soup.
