Let’s add another no knead bread – Pumpkin no knead bread – to the collection, shall we? This no knead crusty loaf is baked in a Dutch oven and has pumpkin puree, fresh rosemary, and olive oil added to the loaf, with a sprinkling of sea salt on top. It’s a yeast bread that rises like other artisan loafs, and a delicious savory way to enjoy pumpkin, and comes out a gorgeous autumn yellow-orange color!

This time of year, pumpkin bread recipes abound. Usually these are in the form of a quick sweet bread, made with no yeast, with a cake-like result (like this chai spiced pumpkin bread).

This is not that kind of pumpkin bread. Instead, it’s a yeast bread, an artisan loaf that comes out crusty on the outside and fluffy on the inside. Perfect for serving with those autumn and winter soups and stews!

Butternut squash is halved and cut cross-wise but not all the way through. It’s brushed with a slightly sweet and savory, umami-packed maple miso butter while roasting. You’ve had hasselback potatoes. But have you hasselbacked (can I make that a verb?) any other veggies? It works so well with butternut squash!

Hasselback is when you slice something crosswise, but not all the way through, before roasting. That way, any flavors, oils, or sauces you are adding can seep into each crack, enhancing the flavor and increasing the surface area being roasted and exposed to the hot oven air.

This hasselback butternut squash is absolutely delicious, easy to make, and not too sweet. I find butternut squash recipes often are overly sugary; the salty, umami flavor of the miso in this recipe helps balance the natural sweetness of the squash along with a little bit of maple syrup (though you can always add more sweetness if that’s what you prefer!).

There’s so much flavor in this mashed butternut squash with sweet potatoes, with rich nutty brown butter, sweet maple syrup, and fresh rosemary! It’s the perfect sweet and savory balance that complements the delicious natural flavor of the squash and sweet potatoes. The vegetables are halved and roasted peel-on, so no need to peel and dice the veggies, meaning less prep and hands-on time.

One of the best parts of this recipe is how hands-off it is. Roasting the vegetables before mashing them makes the flavor and texture SO good. And while the squash and potatoes take a while to roast in the oven, the hands-on and prep time for this recipe are very quick and easy.

Peeling and cubing the vegetables before roasting would, in theory, create more surface area to get caramelized and seasoned while roasting, resulting in more flavor. But I’ll do almost anything to avoid peeling veggies, especially hard-to-peel ones like butternut squash. Here’s the compromise: The halved squash and sweet potatoes are scored in a crosshatch pattern on the surface before seasoning and roasting, peel ON, creating more nooks and crannies for the flavor to seep in and surface area to get caramelized with no peeling required.

Everyone should have a “go-to” green salad recipe. This is mine. I’ve made it on countless occasions – ranging from quick weeknight meals to Christmas dinner.

The flavors all pair so well together with a perfect balance of sweet, tart, and, tangy. And the textures as well, with the crunch of the pecans and the creaminess of the goat cheese that coats every bite.

I usually make this recipe with my creamy maple balsamic dressing. But you can use store-bought dressing to make this salad recipe extra fast and easy.

Ingredients and Substitutions

  • Mixed Baby Greens – I used spring mix. You can use mesclun greens, baby arugula or baby spinach, or chopped up lettuce if you like.
  • Red onion – very thinly sliced so it’s not overpowering

I’ve been wondering what to do with the GIANT bag of shredded mozzarella cheese sitting in my fridge. Sometimes the best recipes come from using stuff up with what I have. In fact, raiding your fridge or pantry is a great way to reduce food waste.

And this Italian mac and cheese is no exception. No cheese will ever be wasted in my house!

The cheese sauce is creamy and decadent, made with butter, milk, mozzarella cheese, parmesan cheese, and some fresh parsley. The breadcrumb topping – oh boy. A mixture of breadcrumbs, butter, more parmesan and parsley, and garlic powder. And when the two meet, it’s heaven.

The time-saving trick for this recipe is that it’s broiled for only a few minutes after sprinkling the breadcrumbs on top, as opposed to baked.

I’m so excited to share this delicious recipe for Dutch Butter Cake (aka Boterkoek). It’s a dense, cookie-like cake, with the most addictive chewy edges, similar to shortbread in that it uses LOTS of butter and no leavening. This version makes two cakes – so you can give one to a friend or stash one in your freezer for later. It’s flavored with both almond extract AND vanilla extract and uses salted butter for a simple but perfect salty-sweet, buttery flavor.

I was reminded about this recipe when I got a surprise batch in the mail from my cousin last December. My Aunt Viki (and my go-to cooking expert) has been making this butter cake for as long as I can remember. She originally got the recipe for “Dutch Almond Coffee Cake” from a local magazine from Amherst, NH.

But whether you call it butter cake, coffee cake, or Boterkoek (its Dutch name), this delicious almond-flavored dessert is like nothing you’ve ever had.

It’s dense and chewy like a cookie, and it’s like a softer shortbread. It reminds me of marzipan in flavor, and you bake and slice it like a cake.

This Sweet Potato Casserole recipe is easy to make ahead of time up to three days! It’s topped with the most deliciously crunchy almond streusel topping, with NO marshmallows. And it’s not too sweet – this recipe uses only a little bit of maple syrup and brown sugar, and plenty of butter, with vanilla and cinnamon for extra flavor.

It may be an unpopular opinion, but I DON’T like marshmallows on sweet potato casserole. I mean, is this dinner or dessert? You have a gorgeous roast turkey, creamy homemade mashed potatoes, gravy, and then… marshmallows? Really? It just doesn’t make sense to me.

Instead of marshmallows, this recipe tops the sweet potato filling with a toasty almond streusel topping. (Of course, no judgement. Do what makes you happy.)

Along the same lines, I prefer a sweet potato casserole that isn’t overly sweet. Sweet potatoes, as their name would indicate, are already pretty sweet. Why is why they’re great in sweet potato pie – an ACTUAL dessert.

I have so much love for this recipe for Cranberry Orange Biscotti, made with FRESH cranberries instead of dried! They’re flecked with fresh orange zest, with a crumbly and hearty texture from chopped almonds. And they freeze beautifully, so you can take one (or five) out when you want to enjoy them with a cup of tea or coffee, or if you have guests over.

Homemade biscotti are easy to make, but do take a little bit of time to complete, since you have to bake them twice. And since they store really well for a few days after baking (or in the freezer for a few months), it’s so worth the time investment.

If you end up with any leftover fresh cranberries from making fresh cranberry sauce for Thanksgiving, this is a perfect way to use them up. They add a tart flavor and beautiful color to the cookies, along with fresh orange juice and zest and lots of almonds.

And these cookies aren’t that bad for you- there’s only a half cup of sugar in the whole batch, and the addition of almonds adds protein and healthy fats to the mix!
