This is your public service announcement to NEVER throw away your rotisserie chicken carcasses – you can make an absolutely delicious, rich, homemade chicken bone broth out of them that GELS! When homemade chicken stock gels up (yes, exactly like jello) that means it’s a nutrient-dense bone broth, which is very high in collagen. The stock has a rich, unctuous, and viscous texture. Not to mention it’s high in protein, and the collagen is beneficial for your joints, skin, and overall well-being. And it’s essentially free since we use scraps that would otherwise be thrown away!

I don’t know about you, but I use rotisserie chickens all the time. Why go through the hassle of cooking a chicken when you can get one fully cooked and super flavorful for like $7 at the store? I use shredded rotisserie chicken meat for all kinds of things. Like chicken salad, chicken and dumplings, and healthy chicken mushroom stroganoff.

When you’re done collecting all the meat from the rotisserie chicken, you’re left with the carcass, mostly consisting of the bones and skin.

Cooking barley (pearl or hulled) in an instant pot or pressure cooker is the fastest, easiest way to cook this heart-healthy grain to fluffy perfection in only 20 minutes! Use cooked barley as you would rice or oatmeal- in salads, for breakfast, and all kinds of recipes. 

Barley is a nutty, earthy grain with a wonderful flavor and chewy texture that’s really inexpensive. It’s packed full of soluble fiber and nutrients, making it a heart healthy grain. Honestly, I didn’t even expect to put it on the blog, I was so skeptical.

But OH. MY. GOODNESS. I was wrong. It’s soooo good! I think you’re going to love it.

First of all, there’s a whole can of pumpkin added to it. It definitely adds a squash-like, pumpkin flavor to the chili, but not overwhelmingly so. (For another great recipe that uses the WHOLE CAN, try these healthy pumpkin pancakes!)

What it does do is add a big ol’ serving of vegetables to the chili (pumpkin, along with other winter squash, is super good for you– it’s packed with vitamins A, C, B6, and tons of fiber!).

Eat more fish- that’s one of my biggest healthy eating goals for 2018. Packed with omega-3 fatty acids and lean protein, fish and seafood is a staple of the Mediterranean diet. This Instant Pot Fish Stew is a perfect way to incorporate more fish into your diet! And it only takes 20 minutes to make start to finish in your pressure cooker (but you can make it on your stovetop or slow cooker too!).

I used sea bass to make this. It’s a relatively inexpensive fish, it’s mild tasting, sturdy, and usually wild caught. And it’s easy to find in the freezer section of your grocery store. You can use any other firm white fish, such as cod or halibut, or even tilapia, if you want.

The thing I love about this stew is the fish stars as the main ingredient. It’s bulked up a bit with some potatoes and tomatoes, and flavored simply with fresh lemon juice, fresh dill, and extra-virgin olive oil, with just a pinch of red pepper for spice.

I cut my fish into large pieces- about 2 inches each. This ensured it wouldn’t vanish into the soup.

Brr, it’s COLD lately! I’m in Texas, and this sixteen degree weather is not something I signed up for when I moved here. But I’m not complaining, since I’ve got this warm, hearty, delicious Winter Minestrone Soup with Root Vegetables and Quinoa to keep me warm!

Minestrone is one of my favorites, and this version of winter minestrone soup with lots of seasonal vegetables, such as potatoes, cabbage, kale, and parsnips doesn’t disappoint.

Winter Minestrone Soup is the perfect candidate for Bowl of Delicious’s January theme of recipes that fit the Mediterranean diet.

Aside from its Italian roots, this soup is packed with plant-based goodness- tons of veggies, white beans, and quinoa- staples of the Mediterranean Diet. It’s made extra delicious topped with a good portion of extra-virgin olive oil and some parmesan cheese for that delicious, salty, umami punch. 

Traditional Minestrone soup uses small pasta, such as ditalini. I chose to use quinoa instead for a few reasons. First, it’s a whole grain (well, techinically a seed), so its nutritional value is better than pasta.

This Instant Pot Split Pea Soup, made with a leftover ham bone (or any other ham), is a game-changer. The pressure cooker cuts the cooking time in half and imparts the flavor of the ham into every scrumptious bite. It’s so simple, but SO delicious. And it’s ridiculously easy to make!

What are split peas?

Dried split peas are part of a food group known as pulses, which include beans, chickpeas, peas, and lentils. I love cooking pulses in my pressure cooker because it takes such a short amount of time, meaning you can start it on a weeknight and have it ready in less than an hour for dinner. My last pressure cooker pulse creation was this Instant Pot Chili, made with dried kidney beans and ground beef.

I love cooking with split peas because they have many of the same health benefits as other pulses, but take a shorter time to cook and don’t require pre-soaking. And they are just so tasty!

And my favorite part about pulses: you get a lot of nutritional bang for your buck. They are one of the cheapest and healthiest foods out there- a whole 1lb.

My life has changed drastically since buying a pressure cooker. I’m constantly amazed by how quickly it cooks ingredients with traditionally long cooking times. This recipe for Instant Pot Chili is made with dry kidney beans, but only takes 15 minutes of actual cooking time! It’s packed with warm and velvety flavors from a mixture of awesome spices, including cocoa powder (trust me, it works). Since the bulk is made from dry beans, it’s super inexpensive to make and much healthier than a majority meat chili. 

I plan on making this weekly to get me through the winter. It’s like eating a big bowl of cozy- it’s so hearty and satisfying and warms you to the core. Mmm, mmm.

I got an Instant Pot for Christmas, and I’ll admit: it took me a while before I felt confident using it. There is a bit of a learning curve associated with it, as with any new cooking technique or kitchen gadget. But after only a few uses, I can officially say that I’M OBSESSED. It’s amazing for cooking tough cuts of meat to perfect juicy tenderness (think: pulled pork or pot roast).
