My husband and ten-year old son loved this, and I’ll be making it again.

So glad you liked it! I’ve recently started using this marinade on whole boneless skinless chicken thighs and broiling them for 5-6 minutes on each side as an alternative to the skillet – it’s great if your stovetop burners are full!

I’ve made this multiple times and it’s always a crowd pleaser! The first time I made it I didn’t have lime so I used 1/4cup orange juice and it was so delicious that I’ve never even tried it with lime! I will also grill it in the summer months. The best chicken taco recipe in my opinion :)

I tried this recipe for the first time last night and oh my gosh it was so good! I added it to a “Mexican bowl” and it reminded me so much of Chipotle’s chicken. Love it and definitely recommend giving it a try!

Kosher salt is just an ingredient, a coarse salt that is referred to as “Kosher” (historically used to draw blood out of meat to make the meat kosher) even though the salt is technically not “kosher.” Glad you liked the recipe!

Thanks for the recipe!

So glad you liked it! I like using chicken thighs the best for this, too.

I used this recipe for enchiladas and it was a big hit! I made it with chicken thighs because they’re more moist and flavorful.

So glad you liked it! Great idea to make a sauce out of the leftover marinade!

I have not but if you do, I highly recommend taking the time to sear it on the outside first, since that crispy browned outer layer is so good. Honestly, by the time you’re done searing it, it will almost be cooked so the slow cooker will kind of become a moot point.

HOWEVER, I have broiled this chicken with great success. I just broil for about 5 minutes on each side (this will depend on the heat of your broiler, gas and electric heat very differently, so keep an eye on it!) if you don’t want to deal with a skillet and all the splatter that comes with it! Just marinate the chicken (I recommend thighs) and broil, then once it’s done and nicely browned you can shred or chop it.

Very good recipe! I grilled the chicken on high heat. After I put them on the grill, I took the rest of the marinade (that I doubled)and put it in my Instant Pot on sauté to cook it (since it had raw meat in it) and added water as needed. Rested the chicken for five minutes, then cut the chicken into strips and stirred into the sauce that was now on the warm setting and was perfect to keep warm and for entertaining. All my guests loved it! Making again for sure!!
