Good idea! You might consider using chicken thighs instead of breasts, as thighs are much harder to overcook. Either way, I would put the chicken bites in a casserole-type dish and cover with foil, and reheat gently in the oven at 350 degrees until they’re warm. Hope that helps and have fun at the party!

These actually changed my life. I made a batch and have eaten it everyday for the past two days. I made a Mediterranean-inspired bowl with chopped cukes and tomatoes, sliced red onion, feta, and Kalamata olives with some tzatziki sauce on the side. So fresh and delicious! The chicken is the star of the show.

So glad you liked it! Honestly if you’re going to bother cooking it later with the wine, I think you might as well cook up the chicken at that point too since it doesn’t take too long. My suggestion would be to freeze the chicken raw in the marinade, so you can defrost it in the fridge overnight and then just dump it into the skillet, cook until the chicken is done, and then do the wine part. If you really want to freeze it cooked, I would do everything including the wine and then just defrost and reheat when you’re ready to eat!

This was DELICIOUS! Instead of using a pan, I used a grill. Because I wanted the wine flavor, I tossed it in the white wine just before putting it on the grill.

Such a simple marinade, SOOOOOO delicious!

My son loves these for his meal prep. He is 14 and just started weight lifting at school and I prepared about 3 lbs of these for him to take to lunch with rice and vegetables and he loves that it is healthy and has lots of lemon flavor!
