Good question! It may benefit from a stir halfway through to redistribute the wings so they all cook the same amount. I also think removing with a slotted spoon or spatula may help them not fall apart as much. When you broil them, it may help kind of “bind” them back together by forming a crust on the outside of the wings. As for the broiler, I prefer to broil them pretty close to the broiler to get a nice crust but this will also depend on your oven. I’ve had much different broiling outcomes with a gas vs. electric broiler, and rotating halfway through may be necessary if your broiler doesn’t broil evenly. So just keep an eye on them! Hope that helps.

I think mine overcooked because I made a double recipe—there was so much drained fat that the bottom wings/drums meat literally fell off their bones. Any advice on double recipes?

Also, how far do you broil from the heat? Do you rotate halfway through?

So glad you liked it! The cooking time should be more than enough, but it’s possible it was your slow cooker itself, or the temperature of the wings when they started (if they were partially frozen still, for example). Regardless, cooking times are often hard to estimate because of so many variables, so anyone concerned about this should know that literally any recipe may need to be adjusted based on your equipment, size or temp of the ingredients you use, and other factors. I’ll also add that taking the temperature of meat is always a good idea, and be sure to measure the temperature in the thickest part of the meat itself – if you measure at a bone, you may get an inaccurate, lower reading.
