I’ve been trying to cook more instead of eating out and this was one of the best “easy recipes” I’ve had so far.

I did regular andouille and didn’t do as much cream and parm (trying to make it a bit lighter to offset the full fat sausage) and I made the pasta separate. I also added a sprinkle of thyme, parsley, and cajun seasoning (along with a bit of habenero for the spice!)
I did add a little more parm to the plate (offsetting the offest, lol.) This was SO GOOD, I’m fighting myself trying not to get more.

This was so good! Didn’t have fresh parm so I just used shake cheese. It was still delicious. Both my kids (6 and 8) ate their whole bowls! Thanks!

Oat milk is definitely the best dairy-free substitute in terms of taste and texture, but it won’t be as creamy and rich as using heavy cream. You may want to stir in a little pat of butter (if butter works for your diet, or ghee or something) at the end to make up for that lack of fat! Hope that helps.

My favorite Dutch oven is my lodge – it’s MUCH cheaper than a le creuset! It’s 6 quarts. I also have a Cuisinart and I prefer the Lodge. The enamel coating is super sturdy and the handle on top is metal so it’s oven safe.

What kind and size is your dutch oven? I recently found a 3 qt fryer with a lid. It doesn’t have brand on it. So far so good. I like it. A person almost needs 2 dutch ovens. One for bread and one soup. That’s what I will be doing during the winter months. I have read so many reviews. I wish I could afford Le Crueset.

Just made this- it was delicious! Super flavorful. I used polish kielbasa and I actually didn’t have heavy cream so I used the whole milk I had in the fridge and put about 4 oz cream cheese in to get the creamy texture. Even my 14 month old gobbled it up!

This is so easy and tasty. Whole family loves it. I didn’t have frozen spinach, so just threw several huge handfuls of fresh baby spinach in at the end and it was excellent, so making it that way from now on.
