Soooooo good! An easy and delicious recipe. I removed the skin before marinating, and it didn’t affect the salmon at all. Using a cast-iron skillet, I achieved a dreamy, crispy coating on the outside, while the inside remained perfectly tender. 2 minutes on each side, and voilà! I served it with toasted sesame seeds and scallions, accompanied by a side of farro. Thanks you!!

I’m happy to troubleshoot this issue with you, however, this is likely user error based on the fact that so many others have had positive outcomes. Now let’s try to solve this issue!

1) First of all, it seems to me like you added all the sauce in with the salmon. The recipe instructions indicate that you should remove the salmon with tongs in order to leave it coated in the sauce but not add all the sauce at once. This will get a nice sear and color on the salmon bites. Then only once the salmon is cooked do you add the sauce in. If you add the sauce in with the salmon, yes, it will likely burn before the salmon is cooked.

Other tips:

– Make sure the skillet isn’t *too* hot. I’ve specified medium-high heat, however, different stovetops vary for how hot they get on that setting. If yours runs hot, I’d try medium next time.
– What kind of skillet did you use? I recommend a nonstick for this. If using stainless steel or something that just gets a bit hotter, you may find yourself needing to adjust the heat setting and cook a bit differently to accommodate that.

As the photographs show, the sauce didn’t burn for me when I made it, nor for the other people who made this with good reviews. Recipes can go south for many reasons and sometimes it’s the recipe itself but many times it’s just the nature of cooking – there are so many factors to consider! In this situation, it’s more appropriate to leave a question or comment without a negative star review, if you find yourself in this position again with me or other food bloggers. This was a quick, easy and delicious recipe. I used steelhead trout instead of salmon…..a similar flavor. I marinated the fish in the fridge for a couple of hours. Sauteed string beans in the same pan, and had rice on the side. I will definitely make this again. Lots of flavor and fish was very tender.

One more thing – tuna steak is traditionally cooked to a medium rare internal temp, so if that’s something you want, you should make sure to not cook it as long as you would for salmon (only 1-2 minutes or so at a high heat so it sears!).
