Amazing recipe! I just made this for the first time and it sounded so good that I doubled it right off the bat. Cooking the canned chickpeas right in the same pot as the quinoa is so genius and really makes this such a convenient weeknight dinner; I never knew how much better canned chickpeas would get if you just cook them slightly! Complete gamechanger method.

The only adjustment I made was just slightly less olive oil. With my doubled recipe, I only used 4 tablespoons (so about half of what the recipe calls for as written). I also sprinkled some crumbled feta on top to serve. I seriously couldn’t get enough of this salad. Thank you for this fantastic recipe that will definitely go in my all-time favorites rotation!!

I adore tabbouleh, especially in its Lebanese form, can’t have enough parsley! While I have been making it with quinoa the last 2years, I’ve never thought to add chickpeas, and now I know what I’m making for dinner! Thanks for the great idea, can’t wait to eat it.
