Love this recipe! Have made it several times for chicken salad. This time I am going to try freezing one of the breast’s for later use in salad or soup.

You can use this poached chicken for anything you want! But keep in mind, it’s already cooked, so if you add it to another recipe you want to add it at the end with just enough time to heat up so it doesn’t overcook and become tough or dry. I don’t have a chicken stir fry recipe that would be good for this, but I think you can find any veggie stir fry you want and just add some cut up or shredded poached chicken in at the end and you’d be fine. Great Recipe. A follow up question. Can this poached chicken be used to make chicken Stif fry with vegetables or sauteed along side vegetables. If so, do you have recipe for that?

I normally turn my leftovers into shredded chicken for my pizza.
